With the first distillation complete, Han-sol and Soo-yeon face the daunting challenge of aging their spirit, requiring expensive and hard-to-source oak barrels. Inspired by an old family anecdote, Han-sol proposes an unconventional solution: repurposing generations-old, unused traditional Korean fermentation vessels for aging. Soo-yeon, initially skeptical of such a departure from cognac tradition, is swayed by his innovative spirit and the potential for a truly unique product. Together, they meticulously prepare and transfer the delicate spirit into these unique vessels. The arduous task concludes, and they begin the long, anxious waiting game of the aging process.
